I've never had a problem, but read
this FDA
report before you cook beans
in your crockpot. Raw and undercooked
kidney beans are not good for you.
You need to make sure your crockpot
brings the beans to a boil on the
high setting and that it stays
at a boil for at least 10 minutes.
Since I cook mine on high for an
entire evening, I've had no problems
at all. I knew how to cook dried
beans; I didn't know all of the
why behind the proper method.
INGREDIENTS:
1 1/2 cups dried beans
water, to cover
METHOD:
Early in the morning, before going
to work, rinse dried beans
and place in glass container
large enough for beans to
double in size. Cover beans
with enough water to cover
and then some, about three
inches of water above the
beans. Soak all day, at least
8 hours.
When home from work in the evening,
place beans and water in crockpot,
add additional water to cover well.
Turn crockpot to high for evening,
check to make sure there is enough
water to cover well, then on low
overnight.
In the morning before going to
work, test beans to make sure they
are done. If not leave on low for
the day. If they are done, drain
and refridgerate.
Use in place of canned beans in
recipes, such as Refried
Beans and Canny
Canadian Chili.
They freeze well for use in recipes.
