INGREDIENTS:
4 large slices of zucchini, 1/4" thick medallions
2 whole tomatoes chopped w skins on
1 small onion chopped
3 cloves garlic chopped
4 leaves fresh basil chopped
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground pepper
METHOD:
Place zucchini slices in baking pan sprayed with cooking oil. Sprinkle salt and pepper over slices. In mixing bowl combine tomatoes, onion, garlic, basil, oil, salt and pepper. Mix to combine. Spoon over zucchini slices and bake at 375 degrees for 20 minutes.
