INGREDIENTS:
1 1/2 cups rice, long-grain, cooked
1 cup whole tomatoes (16 oz), mashed
1 cup Mexican style beans (16 oz)
3 garlic cloves, minced
1 large Onion, finely chopped
2 tablespoons vegetable oil
1 cup cottage cheese, or 3/4 cup sour cream
1 cup Green chili peppers
2 cups Monterey Jack cheese, grated

METHOD:
Mix thoroughly all ingredients except 1 cup of the grated cheese. Pour mixture into well-greased crock-pot. Cover and cook on low setting for 6 to 9 hours. Just before serving, sprinkle with reserved grated cheese. 6 to 8 servings.

Notes: Used 1 green pepper instead of green chili pepper and added three shakes jalapeno sauce at end and stirred in. Sauted chopped onion, green pepper and garlic in oil before adding. Used 1 can black beans, 1 can plum tomatoes. Added 3/4 cup sour cream instead of cottage cheese. Added 1 cup extra water (de glaze), seemed that there was not enough water for the rice. No salt added, quite salty on its own.

Per serving (excluding unknown items): 740 Calories; 63g Fat (76% calories from fat); 8g Protein; 36g Carbohydrate; 3mg Cholesterol; 135mg Sodium
