This morning Attila brought in the first full sized zucchini. Since I baked muffins last week, this lovely specimen will become my lunch, sauteed with onion, grated carrot, chopped beet leaves and stems, and an egg. I will serve the vegetables on one serving of cooked, then cooled, then heated, noodles. The mixture will be tossed with home canned Sweet Thai Chili Sauce.
Attila says there are many more zucchini that will soon be ready. I plan on baking a LOT of chocolate zucchini muffins, it will be a marathon muffin baking day. They will be frozen to enjoy over the course of the summer. During the winter months I use grated apple in my muffins, but I prefer them made with zucchini.
I love the English language. Of course I am biased, English is my mother tongue.
Occasionally I look at the news. This morning I was looking at headlines posted on CTV news, The Canadian Press. I wondered about the editing, who let this one pass for publication.

Obviously I was not the only one to notice the original title. The correction was quick, and much appreciated.
Note: No entrepreneurs have been harmed in the making of this post. No lettuce sales were lost as a result of planting lettuce roots. The garden has three other varieties of lettuce grown from seed, the specimens grown from roots are for experimentation purposes only. We do not purchase lettuce during lettuce harvest season in the garden.
We bought lettuce with the roots intact, after eating the lettuce, Attila planted the roots.

Thanks Sandy, nice to share a chuckle with a friend! I like zucchini, Attila does not. Usually when he brings produce in from the garden he is delighted, but not with zucchini, lol. He brought in four fairly large ones this morning. So I will be busy today making chocolate zucchini muffins, and a stir fry for lunch, the rest will go in the refrigerator for tomorrow. I discovered it in my 30s when I baked a chocolate zucchini cake, I was hooked!

Joan, the quote is kind of true, zucchini here is so easy to grow, and this year Attila perfected his technique, so there will be lots of it. We thought about giving some to the neighbours (in their early 20s) but we figure they don’t cook, so wouldn’t use them. Our other neighbour is a bachelor and he only BBQs. I will eat them up and find ways to preserve them!
There are errors in the article, too. In the last 2-3 days I’ve found several articles – some published by quality publications – that have similar errors. DH is blaming AI, saying the authors are letting AI write the articles for them. If so, the powers that be need to upload some grammar and writing fundamentals primers to AI. If not, the editors need to start doing their jobs.
I’m a zucchini fan, too. We usually get one or two every week or so and have them with our dinners.

Zucchini is wonderful. It was new to me as an adult, we did not grow in our garden on the farm. I started with chocolate zucchini cake, and now add grated zucchini to any baking product that I would like to be very moist. Today I tried making zucchini chips in the air fryer, not a big success, but I ate and enjoyed every bit of the failures. Then I tried them in the oven, another failure, and again I ate the whole failure. So it ended up a eating a whole large zucchini in the end, and decided to call that lunch.
