
This was grown in the raised bed, the length of the root has come as quite a surprise!
I love parsnips! They are super expensive here, I’ve never seen them sold at a reasonable price, so I usually only indulge in this vegetable for special occasions. This year Attila agreed to try growing them again, other years they had failed to thrive. This year they have thrived in the raised beds.
Tomorrow I plan on grating some of the parsnip for my stir fry, which is really a vegetable stew because the zucchini is mostly water. Attila is still harvesting zucchini, but has stopped manually pollinating the blooms, because the two coolers full of zucchini are still relatively full.
I eat zucchini with every meal right now. Breakfast includes Chocolate Zucchini Muffins. Lunch is a zucchini based vegetable fry up, with diced onions, grated carrot, garlic, and 1/4 tsp of black pepper… served in a bowl topped with 30 g of grated lactose free cheddar cheese. Dinner includes a zucchini vegetable medley cooked by Attila, consisting of onions and mushrooms, not sure what else he puts in it, it is delicious. And despite all this zucchini eating, the coolers seem to always be full of zucchini. I don’t need to can anymore zucchini relish or zucchini pineapple this year, we still have plenty.
Menus in tune with the seasons involve a lot of repeat performances.
So far there are no affordable pickling cucumbers at the grocery store. They are selling a barely full three litre basket of pickling cucumbers for $4.99. might do three 500 ml jars of pickles. The baskets are picked over, and the cucumbers don’t look very fresh. That is a pass. If they don’t offer Ontario pickling cucumbers in reasonably priced half bushel and bushel boxes, I will use dill and pickle other vegetables instead, beans are a good choice, our scarlet runner beans should start coming in soon.
Our pickling cucumber plants have produced few cucumbers, but over the course of the past week Attila has harvested half a dozen, which is enough for a small batch of cucumber dill pickles. Some is better than none!
Within the next week we will have cabbage and kohlrabi coming in from the garden, we will be busy!
It is peach season in Ontario. I think peaches just might be my favourite fruit. We bought two four litre baskets last week, they are almost gone now. They are great for breakfast, peeled and eaten over the sink, where the juice that runs down my chin will land sensibly.
Every time I enjoy a raw peach, I think of my paternal Grandparent’s house. My Grandparents owned a fruit farm, and the peaches grown there were quite wonderful. When we visited, we children were allowed to wander into the peach orchard and pick fresh peaches, to eat as we stood under the trees. Peach juice stains, so we were warned by our Mom to be very careful not to let the juice drip onto our clothes. Eating a fresh peach I am taken back to that orchard, and it is such a pleasant place to be.
