The Vegetable Chronicles: Green Beans

Green Beans fresh from the garden!

Green beans are Attila’s favourite vegetable. I like them when they are fresh from the garden, don’t mind them when they come out of a can, and dislike them when they are frozen.

Right now they are fresh daily out of the garden. We have either beans or beets from the garden for dinner every evening, usually with a small piece of chicken or fish. Sometimes we have sandwiches, tuna, egg salad, and tonight grilled cheese with sweet onion. Every evening meal begins with a green salad, made from mostly garden greens, cucumbers, carrots, and store bought onions.

The garden is providing us with cucumbers, I one raw and sliced for breakfast every morning. The zucchini this year is prolific, there are more than a dozen fairly large zucchini in coolers in the basement, and more to come. I have been having them in a stir fry for lunch, and will be baking more chocolate zucchini muffins as soon as I can free up some space in the freezer. Attila harvest broccoli now and then, in small quantities. It is cooked in the Instant Pot, and then frozen until there is enough to make a batch of Cream of Broccoli Soup Base.

I think there may be enough cucumbers coming out the garden this year to can a few batches of dill pickles!

Today has been a perfect summer’s day. The air quality has improved tremendously in our location. The sun is shining. There is a lovely warm breeze, and it is not hot or humid. I have all of the windows in the house wide open. I love open windows!

This past weekend my Mom enjoyed visiting with her two cousins, children of her Dad’s siblings. By her account she had a lovely time!

I love green beans as well and eat them like candy.
I also love cauliflower and if it’s on a tray of cut veggies and dip, I have to restrain myself otherwise I’d eat only the cauliflower.
