Summery weather is here at last!

We enjoyed visiting my sisters and Mom for Mother’s Day. We stayed with my youngest sister, who is a great hostess, as are my middle sister and her partner. We had a lovely time visiting, it was so great to see my Mom. She drove us to the lakefront walkways to take a stroll, and later we drove around sight seeing, enjoying all the lovely fruit tree blossoms. And finally we went for a stroll in a Conservation Park.

My youngest sister had us all for a truly delicious turkey dinner, and the most delicious Carrot Cake I have ever tasted in my life. It was worth the sugar! Good cooks and bakers, the women in my family.

The only down side is that we have to drive through Toronto, and that is never, ever, fun.

On our journey home we stopped in downtown Toronto so that I could attend an appointment at a Blood Pressure Clinic. That was very worthwhile, particularly since the Doctor was pleased with my blood pressure and general health, gave me a passing grade, and I needn’t go back.

The weather has finally turned warm. There are freshly picked lilac blooms on the dining table. Fresh baby spinach from the garden was included in tonight’s green salad. The baby spinach is actually the leaves from the plants that Attila thinned from the rows in the garden, so tasty. It will be a while yet before the plants mature to provide us with more greens. The first rhubarb harvest was stewed, oh so good.

Attila spent his day planting seed plugs to grow in the little greenhouse he setup on one of the new raised beds. Vegetables and flowers. It was also time to trim and mow the lawn. A busy, tiring, satisfying day.

I was busy in the kitchen all day long. Nine hamburger buns were baked. One dozen chocolate muffins were baked. Refried beans were cooked. A batch of cherry juice gummies were made. The hamburger buns were cooled then packaged in twos, and frozen. The chocolate muffins were packaged in twos, and frozen. The litre jar of cherry juice was used to make gummies, and six small containers of it were frozen for future use. The refried beans went into six small containers, then frozen for future use.

I use recycled fruit cup containers to freeze small portions of food for future use, such as the cherry juice, and the refried beans. They work really well, and are about a half cup each.

The light is beginning to fade, the day is winding down. Finally I am sitting with my feet up. It is warm enough that I have placed a small fan by my side, the breeze it creates keeps me comfortable despite it being a little bit warm in the house.

Good grief it is good to be alive!

Lunch today, Molletes! Mine are topped with home canned Cowboy Candy.
Homemade whole wheat buns, homemade refried beans, lactose free cheese from the grocery store, hot sauce from the grocery store, home canned cowboy candy using our garden jalapenos. I’d like to try topping them with chili sauce instead of cowboy candy, that might be good too.

I’m glad you had a good visit, good news from the doctors and are enjoying such tasty food!

We had some great weather last week, but since the weekend we’ve lost the summer with high temps at best making just over 10C/50F. Looks like we’ll warm up a little for the last week of May, though.

Your mollettes look delicious! You have me considering several new meals based on how tasty it looks.
