1 cup whole wheat flour
1 cup rolled oats oats
2 teaspoon baking powder
2 tbsp brown sugar plus 1/4 tsp liquid stevia OR 1/4 cup brown sugar OR ½ tsp liquid stevia
2 tablespoons canola oil
1 tsp vanilla
Preheat oven to 400F.
In a medium bowl, combine flour, oats, and baking powder – add dry ingredients from variation.
In another bowl mix together egg, oil – add wet ingredients from variation.
Add wet ingredients to dry ingredients and stir until just combined.
Scoop batter into greased mini-muffin cups and bake for 25 minutes.
If liquid stevia is not available use 1/4 cup brown sugar.
Always use basic dry and wet ingredients, add additional dry and wet for variations. Make your own variations based on your personal likes, e.g. Pumpkin Spice below, Cinnamon Raisin Walnut, Chocolate Cherry, Cranberry, etc. etc.
Pumpkin (Squash) Spice ADD
½ tsp cinnamon
½ tsp nutmeg
1/4 tsp ginger
2 tbsp flax seed
1/3 cup chocolate chips (optional)
1 cup pumpkin (squash puree)
½ + cup whey or milk to make 1 3/4 cup
