Giant Oven Pancake

Recipe By: Convection Oven Cookbook, page 68


1/4 cup butter
3 whole eggs
3/4 cup milk
3/4 cup flour
1 tablespoon sugar


Heat oven to 375 F. Place butter in baking dish and place in oven while preheating. Place eggs in bowl and beat at high speed for 1 minute. With mixer running, add milk, flour and sugar and beat until blended. (I just whisk it all in a big bowl) When butter is melted, remove pan from oven and pour in batter. Bake until fluffy and brown, about 20 minutes.


Notes: A favorite for breakfast at our house. Easy enough that the kids can make it! Great with fresh sliced strawberries or other fresh fruit, canned pineapple.

Note, August 24, 2017
I no longer eat butter, or sugar. I substitue salt-free margarine for butter, and omit the sugar.
